A pastel de bacalhau at versailles Another popular fried snack, this time composed of bacalhau (codfish) and mashed potato. The secret is in getting the balance between the two right, and then frying them so the pastel is just crispy. Versailles on of the most famous pastry houses ( very nice vintage decoration), has got it just right.
