Red or Green?

NM is known for our chile. Most restaurants offer chile in red or green. Typically if the waitstaff or cashier taking your order asks you red or green, they are referring to the type of chile you would like on your food, whether it be red or green. If you would like both you respond by saying Christmas, meaning you want both red and green chile on your food. You can also decline but you would miss out on what makes our NM cuisine so delicious. You also have the option to order chile on the side and you may try it before putting it on your food.
