During the baking class, I will teach you, step by step, how to prepare a traditional sweet sourdough based pastry ( in Slovak called koláč).
The size of the class will be very small and private to make sure that you have a very personalized hands-on experience.
We start with preparing a sweet sourdough, that we mix, knead and observe how it will grow over time. As any sourdough needs a good amount of time to rest in order to grow and mature, I will prepare another dough in advance that will be ready to work with (until your dough will be maturing). We will observe how the dough behaves when fresh and when dried yeasts are used.
We will prepare two traditional Slovak fillings for our sweet pastry - poppy seed filling and plum butter filling. With those, we will fill our dough before we shape it into smaller pieces of pastry and bake them.
I will teach you a very universal recipe for a traditional sweet sourdough pastry (koláč) that can be used (with small modifications) to prepare other traditional products like Babka, Brioche or Sweet Cinnamon Bunns.
I will provide a printed recipe to take home with you so you can fully focus on baking.
